Christmas cake

We made a Christmas cake on the last Sunday of November. When I say 'we', it was me and my trusty sidekick Eleanor, who can always be relied upon to turn up to help in the kitchen, even if her main interest is licking the spoon. Her older brother was far too busy building a Minecraft farm full of named cats with one of his best friends to play any part in the process, but I was gratified when he said the house smelled nice.


I've made a relatively small cake again, using the seven and a half inch tin I inherited from my Grandma, who was an absolute master baker. This year I decided to go with Nigella Lawson's recipe and ingredients, but rather than soaking the fruit in brandy overnight, I used Disaronno, which makes the cake smell like marzipan long before it's time to roll out the sweet yellow coating.


Over the last few weeks I've been 'feeding' it more Disaronno on the weekends (with possibly a little extra portion for myself at the same time) and I'm looking forward to icing it with the kids once school has broken up. I'm currently not sure whether to go for 'rough' or smooth icing, but I know I'll have a willing assistant.
